We really have to thank our Canadian neighbo(u)rs for this one. I've just done a bit of research on the sugaring process, and I can say that this is the nicest book on the subject. It's informative -- not only about current practices, but also about the history and culture surrounding maple sugar and syrup. It can appeal to a wide audience, from children to adults, because of the simple way the information is arranged. But best of all - it's gorgeous! Every photo is in color. You get only a taste (!) of what's inside from the stunning cover, which depicts a variety of syrup bottles. Extra bonuses include the "Flavour wheel for maple products" and a variety of recipes. Helen and Scott Nearing's "The Maple Sugar Book" (1950, 1972, 2000) may be the classic reference, but writer Janet Eagleson and photographer Rosemary Hasner should get some kind of award for producing such a useful yet lovely volume. Granted, folks who want to get into commercial sugaring should track down a copy of the Nearings' work. But syrup connoisseurs and backyard sugarers will enjoy turning the pages of this one, over and over. It's small enough to fit onto any bookshelf, yet elegant enough to grace any coffee table, year round.
